Poha, yaani ki chivda, Bharat ke kai rajyon mein subah ke nashtay ka ek bahut hi lokpriya vikalp hai. Halka, swadisht aur aasani se banne wala yah vyajan khas kar Madhya Pradesh, Maharashtra, Gujarat, aur Uttar Pradesh mein bahut pasand kiya jata hai. Poha sirf ek khanay ki vastu nahi hai, balki yeh desi parampara, swad aur sehat ka sangam bhi hai.
Poha kya hota hai?
Poha ko hindi mein "atalefa" bhi kaha jata hai. Yeh chidwa (flattened rice) se banta hai jo chawal ko bhigo kar aur fir press karke banaya jata hai. Yeh sukhaye huye chawal ki ek prakaar ki roopantarit form hai. Poha ko jaldi se banaya ja sakta hai aur yeh asani se hazm ho jata hai, isliye yeh bachhon se le kar bude tak sabke liye upyukt hota hai.
Poha banane ki vidhi
Poha banane ke liye sabse pehle chidwa ko thoda paani daal kar dho kar naram kar liya jata hai. Fir ek kadhai mein tel garam karke usmein rai, jeera, hari mirch, kari patta, aur hing ka tadka lagaya jata hai. Iske baad pyaaz, haldi aur namak daal kar thoda bhuna jata hai. Fir bheega hua poha daal kar sab kuch achhi tarah milaya jata hai. Upar se hara dhaniya, nimbu ras aur bhujiya daal kar serve kiya jata hai.
Kahi jagah par ise aloo, matar ya moongfali ke saath bhi banaya jata hai jisse iska swad aur poshan dono badh jata hai.
Poha ke swasthya labh
Poha ek bahut hi healthy option mana jata hai. Yeh low calorie hota hai aur ismein fiber aur iron ki matra achhi hoti hai. Agar ismein sabziyaan ya moongfali jaisi protein-rich cheezein mila di jayein to yeh aur bhi poshtik ban jata hai. Ismein cholesterol bhi nahi hota, isliye yeh dil ke liye bhi accha mana jata hai.
Poha ko breakfast ke roop mein lena pet ko halka aur din bhar active rakhta hai. Yeh diabetic logon ke liye bhi ek accha vikalp hai, kyunki ismein glycemic index kam hota hai.
Bharat ke alag-alag pradeshon mein Poha
Madhya Pradesh ka "Indori Poha" poore desh mein mashhoor hai. Ismein sev, pomegranate, aur jeeravan masala daal kar uska swad anokha bana diya jata hai. Maharashtra mein "Kanda Poha" bana jata hai jisme pyaaz ka pramukh roop hota hai. Gujarat mein ise thoda meetha touch diya jata hai.
Aaj ke samay mein Poha
Aaj kal ke busy lifestyle mein log jaldi tayar hone wale aur healthy options ki khoj mein rehte hain. Poha unmein se ek behtareen vikalp hai. Yeh na sirf ghar par, balki offices, hostels aur tiffin services mein bhi pasand kiya jata hai. Iska swad aur simplicity use har jagah lokpriyata dilata hai.

Poha ek aisa vyajan hai jo har bharatiya ke kitchen mein aasani se mil jata hai. Iska swad, poshan, aur tazgi se bhara hua texture ise sabka favorite banata hai. Agar aapne ab tak asli Indori ya Maharashtrian poha nahi chaka, to zaroor karke dekhiye – ek baar mein hi dil jeet lega!
